Roast Chicken with Stuffing


Roast Chicken with Stuffing


1 Whole Chicken
Oil
Ghee / Clarified Butter


* For the Chicken:
1 tsp Ginger Garlic
1 tsp Coarse / Rough Salt
4 tsp (level) Red Chilli Powder
1/4 tsp ground black pepper
2 Tblsp lemon juice
a pinch of saffron

For the Stuffing:
1/2 loaf / 11 slices White Bread
1 / 2 Whole green Chillies
1/2 tsp cumin / jeera
1/2 cup milk
1 / 2 Tblsp Butter

Method:

Make slits on leg and thigh of chicken.
Make a paste with the spices for the chicken.
Apply paste onto cleaned and washed chicken.

Remove the crust from the bread.
Break into little pieces.
Mix with the rest of the stuffing ingredients.
Take about 1/2 the stuffing and bunch up and place inside the chicken.
Wrap the rest of the stuffing in foil.

In a deep pot / frying pan warm the Oil and Ghee.
Roast the chicken by searing on all sides.
When roasted, add 3/4 cup water.
Place the stuffing wrapped in foil into pot.
Cook on Medium to High heat.
[4 on a 6 heat setting stove][+-40 mins]

When chicken is almost cooked, unwrap stuffing from foil.
Drop the Stuffing into the pot and remove the foil.

Can be served immediately.
